Pumpkin Bread

    Okay, this would be another one of those ‘unhealthy’ recipes that we used when I was a kid. If you are trying to cut calories or reduce cholesterol…this is not for you.

  • 2 2/3 cups sugar
  • 2/3 cup shortening
  • 1 can (16 oz.) pumpkin
  • 2/3 cup water
  • 4 eggs
  • 3 1/3 cups all-purpose flour
  • 2 tsp. baking soda
  • 1 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1/2 tsp baking powder
  • chopped nuts (if desired)

 

Preheat oven to 350F.

Mix flour, baking soda, salt, cinnamon, cloves, and baking powder in bowl…set aside.

Cream together sugar and shortening in large mixing bowl.

Stir in pumpkin, water, and eggs. Add nuts if desired.

Fold in dry mixture just until mixed…do not over-stir.

Pour into greased loaf pans.

Bake until toothpick inserted into middle comes out clean–about 60 minutes.
