Chicken Spaghetti
Many thanks to my friend, Carla, for sharing this recipe. My kids absolutely love it.

Parsley Potatos
Got this idea from an old boyfriend…one of the few highlights. The dish can be changed to include lots of different tastes.

Apple Cheddar Crumb Pie
This is one of Dad’s favourites. I found the original recipe in a woman’s magazine many years ago and have been making it ever since then. It’s tons of prep, but worth every second if it makes that Old Goat smile.

Peppermint Fudge
Yes, it’s another chocolate recipe…what did you expect from a female? This one goes over particularly well at parties and makes wonderful gifts. It’s quick and easy and still leaves time for your favourite television show.

Pie Crust
I found this recipe in my Granny’s old Searchlight cookbook and have been using it since I was a kid.

Refrigerator Rolls
I have no idea where Mama got this recipe but we’ve been using it for everything from dinner rolls to cinnamon rolls and tea rings since I was a little girl.

No-Name Casserole
My Mama was an expert at feeing four kids on a limited budget. I’m not even sure this is an actual dish, but we loved it then and I still make it today for my own kids.

Headquarters Chili
Couldn’t tell you exactly what side of the family this one comes from, but I think it might be Mom’s.

Chicken Marinate
Another one of those old family things…you’ll find that true about most of my stuff.

Pork Marinate
This is one of those old family things. It works especially well with pork steaks but I’ve been known to use it on chicken and it still gets rave reviews. It works better on meat that will be grilled out…cooking it in the house just seems to take a bit of the fun out of life.

Rocky Road Fudge
There are times when you want the sweetness of fudge without having to drag out the candy thermometer or just plain work too hard. This is for those times. It is not my recipe, but it has become a bit of a staple for quick desserts.

Cornbread
Okay, this is how mama taught me from the time I was old enough to stand in the chair and ‘help’. As with most southern cooking, it is not for the faint of heart or those on strict diets. This recipe is fairly simple because any southern woman worth her salt can make cornbread with her eyes closed.
